Section F4.12 of the Building Code of Australia provides:

A commercial kitchen must be provided with a kitchen exhaust hood complying with AS/NZS 1668.1 and AS 1668.2 where—

(a) any cooking apparatus has—

(i) a total maximum electrical power input exceeding 8 kW; or

(ii) a total gas power input exceeding 29 MJ/h; or

(b) the total maximum power input to more than one apparatus exceeds—

(i) 0.5 kW electrical power; or

(ii) 1.8 MJ gas, per m2 of floor area of the room or enclosure.

If any of the above apply to your commercial kitchen, you must, by law, install a kitchen exhaust system.

Otherwise, a kitchen range hood is not a requirement in a domestic setting. There are however immense benefits in a domestic system.

Cooking processes create grease, smoke, odours and other pollutants. In commercial settings, a large volume of heat is also produced, which can result in an uncomfortable kitchen.

Our canopies are manufactured using 1.2mm stainless steel or galvanised steel. The material for your project will largely depend upon the use and style of cooking, as well as your budget.

Make-up air brings back in air to replace the air that is removed by the ventilation system. Without a sufficient supply of air continually cycling through the kitchen, the ventilation system cannot perform at its highest.

It is therefore vital to ensure proper make-up air to optimise the performance of the ventilation system.
